The answer is thus:
When in Nullspace, it is highly discouraged of peering out into the black. So discouraged that Ripper-Drive ships’ screens (and portholes/windows) all get overwritten with a screensaver for deep travel.
Preliminary attempts to look into Nullspace resulted in the loss of the crew. For safety’s sake, it was decided to disable all view ports when Nullspace was entered.
This led to massive cabin fever and psychosis.
An acceptable work around was to make all screens display planet-side environments. Different suites could be purchased, but most only ever used the ‘lush jungle’ default.

Why do their forward screens show a forest? Do they have a sensor on the planet they are heading towards, or is it just wallpaper?
